For Meat Eaters

From CSA Farmers Market

While we enjoy vegetarian meals, sometimes we like a great steak or luscious lamb chops from our CSA. This is so simple and ever-so tasty.

Source: Created this shortly after ordering Herbs de Provence from Slow Dog Seasoning Co. (Entered by Donna Mohr)
Serves: two (can easily be doubled, tripled, etc.)

Ingredients
2 steaks or 4 chops beef steaks or lamb chops
1 Tablespoon Slow Dog Seasoning Co Herbes de Provence
1/2 - 1 teaspoon Salt (more less to taste)
1/8 teaspoon Chili Powder (more or less to taste)
1 Tablespoon Oil

Step by Step Instructions
 1. Blend Herbes de Provence, Salt & Chili Powder; set aside. Heat grill or griddle. Brush meat with a little oil. Coat one side of steaks or chops with seasoning mixture; press down to adhere.
 2. Put steaks on grill or griddle, seasoned side down. Press remaining mixture into steaks/chops. Do not move steaks/chops about. This will ensure they develop a nice, tasty crust while remaining rare or medium rare in the inside.
 3. When first side is cooked, turn, and cook second side. When cooked to your taste, remove from heat and let rest 5 minutes before cutting/serving. In the spring, I add some grilled asparagus or chard cooked with dried cranberries & chopped walnuts.
