Italian String Beans and Potatoes

<p>My grandmother&#8217;s way of preparing string beans. I know a lot of people like them crisp and crunchy, but for me this is the only way they taste good. They take a little longer, but so worth it.</p>

Serves: 6 as a side dish
Vegan!

Ingredients
2 lbs. string beans
1 12 oz russet potato, 1 inch dice
3 tbsp olive oil
3 cloves garlic, minced
1 tsp dried oregano
salt and pepper, to taste

Step by Step Instructions
  1. Remove tips from beans, wash and drain
  2. Heat oil in a large saucepan and sauté garlic. Add potato and cook until potato is about half cooked, appx. 3 mins.
  3. Add beans, cover, and cook 12-15 mins until beans are very tender. Season with additional olive oil if desired, but it's not necessary. Salt and pepper to taste.
