Recipes

Better, Brighter Creamed Spinach
Food52

Serves 2

2 tablespoons olive oil
1 red chile or jalepeno, diced
1/2 yellow onion, diced
1/2 tablespoon tomato paste
1 lb of fresh spinach
1/2 teaspoon flour
1 cup Greek yogurt
1 garlic clove, diced Heat 2 tablespoons of olive oil in a heavy pan. Add half of a yellow onion that has been diced. Saute until translucent, about 3 minutes. Add diced chile/jalapeno and saute for 1 minute. Add diced garlic clove. Add 1/2 tablespoon tomato paste and cook for 1 minute. Add spinach in 3 batches. Cook spinach until it wilts and then add next batch until all 3 batches have wilted. While spinach cooks, mix 1/2 teaspoon flour with the greek yogurt until smooth. When spinach has wilted, mix greek yogurt into the spinach. Cook 1 minute. Season to taste and serve..

Hello!

We are back! Our every-other-week winter schedule enables us to get our winter chores done, but it sure feels like a long time between visits! These weeks have been enjoyably mild, with none of the weather drama we have had past winters. We’ll see what February and March have in store for us!

We have a nice selection of winter veggies for you. Good fresh greens and lots of spinach to help you get through. Spinach is so versatile – great raw for salads, cooked, or even thrown in smoothies. It also keeps well, as do all the greens as they are so fresh, that you can order more for the weeks ahead!

And carrots! Boy oh boy, do we have lots of our delicious winter carrots for you! So much sweeter and fresher than anything you get in the store!

That being said, here is your reminder to stock up for next week! Plan now for next week and get your eggs, frozen meats, and veggies to get you through!

Miami County Locally Grown:  Tonight's featured vendor? Pumpkin Patch!!


If you shop the Miami County Farmer’s Market at the Troy Lowe’s, you’re probably familiar with Doc Allen and his honey. It was a pleasure to tour their gardens and “honey shed”, learning about his varietal honey – meaning each of their honey varieties is specific to its source – whether clover, wildflowers, acacia or locust trees.

It must have been a combination of the serene setting and their engaging company, but I could’ve happily sat on their porch all day, chatting and sipping iced tea that I normally don’t even like! It was delicious, as was my view.

With 7 total acres, their property is peaceful, utterly lovely… and Doc is the kind of generous, proud tour guide who gladly gives you a taste of everything. I soon learned he was also a gardener after my own heart, when he emphatically stated “Watermelon should be seeded, and tomatoes should be red!” Nell of course gave him the same look I’d seen my grandma give my jokester, gregarious grandfather a million times, which just endeared them both to me even more.

Living and gardening here since 1975, they said they’d always been growing things… from tomatoes they’d sell to restaurants (150lbs a week!) to heirloom melons they’d bought on a trip to Monticello – of course saving the seeds, to continue the strain Thomas Jefferson himself enjoyed. They even used to grow an entire acre of pumpkins, hence their “Pumpkin Patch” moniker, to provide the area schoolkids from Miami East and Piqua a fun field trip where they’d all go home with a pumpkin!

But he’s most proud of his honey, and Doc’s honey is special – not only is it raw and pure, but with his perfect set up, there is no need for it ever to be filtered, heated or strained. Standing in the building specifically for processing his honey, I was wholly envious how well he’d perfected a routine that worked, and afforded him “the best hobby” he ever had.

It all started when his 10-year-old middle son picked bees as his 4-H project, and Father and Son learned together at Bruckner, from the Miami County Beekeepers, where Doc has now been a member since 1982. Their 3rd son also helped care for the honeybees as a hobby, but it was good old dad who carried on after the sons went to college (I gave myself a good laugh when I got home and read what I’d written, that “dad carried on after sons went to cantaloupe” – Nell had been talking with me when Doc came out with yet another tasty sample, and as furiously as I’d been taking notes, it was easy to get a bit mixed up!)

I’m glad so many of you have been taking advantage of having the Allen’s wonderful honey on the market. With all the culinary and medicinal uses for honey, it should be an indispensable part of every home’s medicine cabinet and pantry!

An exciting alternative is Hakurei Turnips, a surprisingly delicate, almost fruity flavor with a nice crunch that has developed a cult following among “foodies”. Though you can eat them raw, by themselves, in salads and slaw, they can also be stir-fried, sauteed’, roasted, and used in soups. If you’re on a diet, substitute for potatoes (2/3rd less calories!).

Kountry Vittles Baked Goods is celebrating their 2nd Anniversary this Week, thank you everyone for you Support. I’ve been busy baking lots of cakes, pies and goodies and will be adding more to the list shortly. This past week the most popular item has been my Banana Pudding Pie with it’s Nilla wafer crust and ole fashioned homemade pudding mixed with lots of banana slices and more Nilla wafers inside. It’s topped off with a generous portion of Meringue and baked to perfection. Next runner up has been the Ole fashioned Coconut Cream Pie topped with Real Whipped Cream. Just can’t beat those ole Timey recipes. Back to baking everyone have a Blessed Day.

My work travel schedule has prevented listing of Sow’s Ear Piggery premium pork products for a few weeks. We’re back on the market this week and hope to make up for the absence with special pricing across the board. All of our products are listed below $4/pound this week. With the return of winter weather, pork is a versatile entrée for comfort food prepared indoors on chilly January nights. Braised, baked, pan fried, or in stroganoff or goulash, pork from the oven hits the spot!

Note: Our pigs are raised outdoors in the fresh air and sunshine, graze clover and native grasses, forage on acorns and persimmons in season, and are also fed non-corn, non-soy, non-GMO feed (pellets of milo, black oil sunflower seed, and wheat) and fresh fruit and vegetables. They are happy, docile, friendly animals who enjoy a good life and re-pay us in natural, non-antibiotic, non-hormone meat and lard for frying and baking. Our pork is nicely marbled and sweet flavored.

IMPORTANT ORDERING AND PICKUP INFORMATION

Ordering will be open until TUESDAY at 10 p.m., and your order will be available for pickup on THURSDAY between 4:00 and 5:30 at our tents located outside Manchester Farm Store, 251 Interstate Dr., Manchester.



We can also deliver your order to your home (or other location) on Friday afternoons, for a small fee, if it’s more convenient for you. If you prefer to utilize this service, please place an order for it, same as other products, selecting your delivery area. Don’t forget to give us your location address in the comments section of the order. Also please text Linda at (931) 273-9708 for specific arrangements.
