Braised Summer Veggies

Serves: 4 servings


Ingredients
1/2 Tbsp butter
1 medium onion, sliced
2 medium yellow squash or zucchini, sliced
3 medium tomatoes, peeled and chopped
1/2 cup whole-kernel corn
1/2 tsp oregano (or 1 Tbsp chopped fresh oregano)
1/8 tsp ground black pepper
1 clove garlic, minced

Step by Step Instructions
  1. Coat 10-inch skillet with cooking spray, then melt butter over moderate heat. Add onions and cook until soft. Stir in vegetables (except garlic), oregano, and pepper. Cover and simmer for 10 minutes or until squash is just tender. Add garlic; cook and stir for two minutes.
