Oyster Stew

Serves: 6


Ingredients
4 tablespoons Butter
3 tablespoons Flour
1 small Onion (chopped)
1 stalk Celery (chopped)
24 Oysters (shucked & drained)
2 cups Milk
1/4 cup Oyster liquor (reserved from the shucked oysters)
1 tablespoon Cajun seasoning
Salt & Pepper to taste
1/4 cup Parsley (chopped)
1/4 cup Green onions (chopped)
3 cloves Garlic (minced)
1 dash Hot sauce
Extra parsley (for garnish, if desired)
Extra butter (for garnish, if desired)
Chili flakes (for garnish, if desired)
Crackers (for serving, if desired)
Bread or rolls (for serving, if desired)
You can also add other ingredients to the stew while cooking, such as:
Shrimp
OR Sausage (crumbled)
OR Potatoes

Step by Step Instructions
  1. Melt the butter over medium-high heat in a large pot or pan. Stir in the flour to form the roux. Stir constantly for 5 minutes. This mixture should be light brown in color. Stir in the onion & celery and cook for 2 minutes.
  2. Stir in the milk, oyster liquor, Cajun seasonings and salt and pepper to taste. Cook, stirring constantly, for 3 to 4 minutes. Stir in the parsley, green onions, garlic, hot sauce and oysters. Bring to a boil and cook for 3 to 4 more minutes,
  3. Remove the pot from the heat and garnish as desired. Serve with bread or crackers
