Strawberry Cream Floats

1 cup Heavy whipping cream
2 tablespoons Confectioners' sugar
6 cups Strawberries (frozen)
1 cup Sugar
1/3 cup Lime juice
2 cups Carbonated water (chilled)
4 cups Vanilla ice cream
Fresh strawberries (sliced, optional)
Step by Step Instructions
- Beat the heavy cream and confectioners' sugar together in a bowl until soft peaks form. Place in the refrigerator until serving.
- Puree the frozen strawberries, sugar, and lime juice in a blender. Press through a fine-mesh strainer into a pitcher, discard the seeds, and stir in the carbonated water.
- Distribute the ice cream among the 8 glasses and pour the strawberry soda over it. Top with the whipped cream and fresh sliced strawberries if desired.
