Recipes

Mashed Turnips with Bacon

1 lb. turnip roots
1/4 lb bacon
salt and pepper to taste

Wash and cube turnips and cover with salted water in a large saucepan. Bring water to a boil and them simmer until the turnip cubes are tender – about 15 minutes.

While the turnips are cooking, place the bacon in a large skillet and cook it until it is crisp. Then remove it from the skillet and crumple it into small pieces.

Remove most of the bacon grease from the skillet reserving about 1 Tlbsp.

Drain the turnips and mash them. Then return the mashed turnips to the skillet with the bacon grease and add the crumpled bacon. Stir over low heat until they reach the desired temperature and season with salt and pepper (garlic powder or chives may also be a nice addition). Serve warm.

Serves 4 as a side dish.
