Republican Valley Produce: RVP-The Good, the Bad and the Ugly
Greetings RVP Customers,
First of all I forgot to open the market on Friday morning, I apologize.
The Good
I am super excited about the rain we received all this week. Also, I am super excited for this nice weather. We have gotten so much planted and transplanted. I worked all last week to get everything in outside and then I worked in the high tunnels all this week during the rain. I am stepping up my planting schedule by 2 to 3 weeks. I hope everything works out. Check out my website, www.jaysjellies.com to see what we have been doing.
The Bad
I was hoping to have spinach available this week. However, a few little furry friends had another idea. They ate off almost all the seedlings. I have spent the last several weeks catching them. Along with the two cats, I think we accomplished our goal. However, don’t worry, I always have a few tricks up my sleeve. I had several flats of spinach transplants to replace everything.
The Ugly
While I really like this weather it has really caused problems with my over wintered crops. All the winterbor kale, radishes, turnips and the remaining Napa Cabbages all bolted (went to seed).
However, the Red Russian Kale is fine. This will be the last week for it. I will need to clear out this bed to get the peppers in for this year. I am hoping my greens will be ready by early April, if not by the April 25th market. After the first of April, we will have all the High tunnel full, all the movable building spots full and we will start planting more crops outside.
Remember, orders are due by Sunday at 5 pm.
Thanks,
Jay and Linda

Wonder what to do with kohlrabi?
Kohlrabi and Ham Bake
Ingredients:
3 Tbsp butter
4 kohlrabi, peeled and diced
8 ounces thick ham, diced
2 Tbsp fresh chopped parsley
3 egg yolks
1 cup heavy cream
2 Tbsp all-purpose flour
Pinch of mace (can substitute ground nutmeg)
Salt and freshly ground black pepper
Method:
1 Preheat oven to 350°F. In a large skillet, melt the butter on medium heat. Add the diced kohlrabi and gently cook for 8 to 10 minutes.
2 Beat the egg yolk, and whisk in the heavy cream, flour, mace, salt and pepper until well combined.
3 Place half of the cooked kohlrabi on the bottom of an oven-proof casserole dish. Layer on the diced ham and parsley. Top with the remaining kohlrabi. Pour the sauce ingredients over the kohlrabi and ham.
4 Bake for 30-35 minutes or until lightly browned on top. Serve immediately.
