Duck Egg Salad with Curry and Dill
from The Bojongourmet.com

If you don’t have access to duck eggs, you can make this with 8 large hen’s eggs. If you do so, reduce the boiling time to 1 minute and the steeping time to 9 minutes.

Makes 4-6 servings

6 duck eggs
4 tablespoons mayonnaise
1 tablespoon mustard (such as stone-ground)
2 tablespoons small capers (preferably salt-packed) rinsed and drained
a few dashes Tabasco or other hot sauce
1/2 teaspoon curry powder
1/4 cup finely chopped red onion
1/4 cup finely chopped radish
1/4 cup finely chopped celery or fennel
1/4 cup finely chopped chives
1/4 cup finely chopped dill
salt, as needed

Place the duck eggs in a medium saucepan and add enough hot tap water to cover by one inch. Place over medium-high heat, and bring to a gentle boil. Reduce the heat and simmer for 2 minutes (set a timer), then remove from the heat, cover, and let stand 10 minutes. Drain the eggs and cover them with ice and cool water to stop the cooking. Let cool completely, then peel and rinse the eggs. Chop the eggs. (I like to cut each egg in half lengthwise, then each half into long quarters, then cut the quarters crosswise into 1/4" thick pieces.)

Place the chopped eggs in a large bowl. Add the mayonnaise, mustard, capers, tabasco, curry powder, red onion, radish, celery, chives, and dill. Stir to combine, mashing the eggs a bit with a large fork. Taste for seasoning, adding more salt, Tabasco, or mustard if the salad needs more pop.

Serve the egg salad on sandwiches, or atop a green salad. It will keep, airtight in the fridge, for up to 3 days.

Hello!

We were all excited to get back to deliveries this week when the forecast for Wednesday struck us today. “Dramatic temperature drops during the day with threats of sleet to snow in the afternoon on Wednesday.” Tally and I know where we are on Wednesday afternoons, so this forecast really got our attention. As folks who monitor the weather constantly, we recognize that the actual weather for Wednesday could be a lot different than the forecast. We have opted to play it safe and take one more week off. Surely, we can get back to regular deliveries next week.

WELCOME NEW BOARD MEMBERS … We are humbled to add two powerfully effective women to our nonprofit Board of Directors this year. Tina Hart of Evans, GA, has been elected board treasurer. Kisha Burke of Hephzibah, GA, comes aboard to lead our G.R.O.W. Harrisburg committee. Both bring good sense and high morale to the local foods movement.

WELCOME NEW MARKET MANAGERS … Please help us welcome two brave souls to the roles of market managers. Amy Sutter (our board president) takes on Leslie’s work at the AJCC for our on-line market. Tara Roberts will cover the Downtown pickup location for our on-line market. Both will be assisted by our ever-awesome student interns.

POSTPONED: We’re sorry to report that the Farm Tour/Workshop/Lunch at Adderson’s Fresh Produce has been postponed. Stay tuned for a new date!

CLARIFICATION: We are often asked about the West End Market & Bakery, which closed its doors in January 2015. Please note for clarification’s sake, Augusta Locally Grown is not affiliated with the West End Market & Bakery, nor with its CSA. However, we continue to rent the adjoining space, from the building owner, at 1808 Broad Street, for our ALG On-Line Market pick-up on Tuesdays and for educational workshops. We call this space “The Local Foods Classroom.”

SAT, FEB 28 – 100 IN HARRISBURG … Help us put in another 25-30 raised bed gardens at individual homes in the neighborhood. We’ll also help rekindle a big ol’ greenhouse with Icebox Ministries! Volunteers work from 9am-12noon; share a simple lunch afterward. Email kim@augustalocallygrown.org to sign up.

THU, MAR 12 – FERMENTED MILK WORKSHOP … Danielle Shelton of “Thoroughbrewed” is back! This time teaching a hands-on workshop with milk, including yogurt, kefir and skyr. Tickets are on sale through our on-line market. The workshop will be held 5:30pm-7pm, at the Local Foods Classroom at 1808 Broad Street, in Harrisburg.

TUE, MAR 17 – OPENING DAY AT THE VEGGIE TRUCK FARMERS MARKET … “Dark Leafy Green St. Patty’s Market Party” is what we’re calling our opening day festivities this season. And yes! We’ll be doubling SNAP/EBT again this year. The market is in Harrisburg, across from the Kroc Center, every Tuesday, 4:30pm-7pm, through October.

WED-THUR, MAR 18-19 – THE GEORGIA DIETETICS CONFERENCE will be held in Augusta this year. ALG will provide an educational booth on local foods. We’ve already been blessed with a great volunteer corp for this event! Thank you!

SAT, APR 11 — SHEAR FUN AT KHAKALAKI FARM … This family-friendly event will include the full range of fiber fun, from sheep shearing to spinning and knitting demos. Kids activities, farm tour and a farm lunch will be included. Overnight camping at this beautiful site is also an option. Tickets are on sale now through this website! $20 for adults; $5 for kids. Space is limited.

SUN, APR 12 – THREE FARM TOUR AND PROGRESSIVE MEAL … Join us for an educational tour and a three-course farm meal … with a different course at each location. Starters at Spirit Creek Farms in Augusta; Stews at Noah’s Farm & Forest in Keysville; Sweets at JandL Farm & Stable in Hephzibah. Tickets are on sale now through our on-line market. APRIL TBA – G.R.O.W. HARRISBURG SEEDLING DAY … Participants in 100 in Harrisburg raised bed project will receive veggie & fruit seedlings – baby plants that have been started by volunteers from G.R.O.W. Harrisburg, headed up by Master Gardener Phil Williams. Distribution date to be announced soon!

FRI & SAT, MAY 22-23 – SHADOW BBQ RETURNS! – This local competition bbq team will again compete in “BANJO-B-QUE,” a nationally-sanctioned event in Evans! Better yet, they feature local meats from local farmers while also promoting Augusta Locally Grown. Save this date, buy your tickets and GO SHADOW BBQ!!!

MON, JUNE I – RAINWATER WORKSHOP FOR URBAN VEGGIE GARDENS … Join us for another “pop up” food-growing workshop. This one will be held at Bottle Tree Farm in Augusta. Instructors Candace & Nate Zukas will share the nitty gritty details of their own rain barrel system, which waters their beautiful urban farmette. 5:30pm-7pm. $5/person. This one will sell out fast!

TUE, JUNE 2 – Augusta Locally Grown is truly honored to be a partner in the Fruit & Veggie Rx pilot project, a first-ever for the Southeast! The pilot will be hosted and coordinated by the Harrisburg Family Healthcare clinic, funded and designed by Wholesome Wave Georgia, educationally enhanced by Icebox Ministries, academically enhanced by Emory University, held together by Good Neighbor Ministries/St. Luke UMC, and made real by medical student volunteers from MCG. Augusta Locally Grown is the project’s cheerleader. June 2 is the project’s kick-off date! Your donations would be very much appreciated.

Joyful Noise Acres Farm:  The on line market is open for ordering.


I think we have drank more hot chocolate this week than all winter combined! The sledding, playing in the snow and just watching those huge flakes of cottony snow have made this a perfect week.
We are pleased to announce Tranquility Farm will be joining our market. They have been bringing eggs over every week but now they are providing some wonderful baked goods made with freshly milled flours. This week we have Chocolate Chip cookies, Ranger Cookies, Apple Cinnamon Muffins, and Indian Naan Bread. We will have more samples this week at pick-up.
The Fermented Beverages class has been postponed until April. Our children have a piano competition and festival in which they will be performing at 1:00 that day. I did not know about it until after we had scheduled our class. Thank you for your understanding.
A huge thank you to all our vendors that worked so hard to get your foods here before the snow on Wednesday. They make quite an effort to keep us well fed and it is appreciated.
