Sapodilla




Sapodilla is a tropical fruit grown in South Florida. The ripe fruit has the consistency and taste similar to a pear dipped in brown sugar. Sapodilla is rich in calories and is a very good source of dietary fiber. Fresh ripe fruit also contains significant amounts of Vitamin C, Vitamin A and potassium. Lacinato Kale, also known as Dinosaur or Tuscan Kale is slightly sweeter than the more widely know curly-leaf kale. The leaves are darker, more narrow and have an embossed texture. Low in calories and high in Vitamin A, Vitamin K and Vitamin C, Kale is a nutritional powerhouse.

Heirloom Living Market Lilburn:  Last Minute Orders??

Just to mention a few…
Heritage Farm has LambLeg of Lamb, Ground Lamb, Neck Roast Slices, Rump Roast, Chops Heart, Liver, Kidneys, Rib Rack and Shoulder Roast! The Chops are delicious! I will be trying some Neck Roast Slices and the Ground Lamb – I see a Shepherd’s Pie in the near future!

Patchwork Pastures is offering Raised Beds for a fantastic price! (less than 1/2 the price of what you find in the retail market) These boxes are well constructed from unfinished oak and uses re-proposed wood from manufacturing crates. They are hinged, so they are collapsible and have metal brackets making them solidly stackable. It’s time to PLANT!

My Daily Bread has added new items: Apple Bread, Cinnamon Raisin Bread, Lemon Poppyseed Bread, Banana Walnut Bread, Bagels, Pumpkin Spice Bread and Banana Peanut Butter Chocolate Chip! All of their Bakery items are Organic and Delicious!

Low Low Knows Bones has 3 different flavors of Organic Dog Treats. Dudley has his eye on the Large Package of Mixed Treats. He says he needs to see which one he likes best! Mary’s crew, Murphy, Kirby and Brocolli (the dog, not the veggie) have already ordered their Cheese Treats!

Bo and Lisa’s Lil Patch has a few packages of Frozen Blueberries still available and Duck Eggs. Try them for your baking recipes – what a difference duck eggs make! I also use them in Frittatas.

Membership Meeting
The members of the co-op came together to host a meeting. We talked about the history of the co-op and started to envision a road map forward that we hope to release to everyone in the future as a well put together plan of action you can help volunteer to see happen. Some big ideas placed forward is in a years time having over 100 growers and hundreds of local products. Multiple pick up locations, Times, and days throughout both Pasco and Pinellas. A farmers market feeling at the Habitat store where we will have more hang out sessions and free education for the community to begin learning how to grow their own food. More outreach to the community about our co-op and how they can get involved. Later down the road 2-3 years out we can imagine getting our own retail location or farm growing food directly for our membership. What can you envision the co-op moving forward growing into? Please share your vision with us and participate by becoming a member today.

King Corn is a feature documentary about two friends, one acre of corn, and the subsidized crop that drives our fast-food nation. In the film, Ian Cheney and Curt Ellis, best friends from college on the east coast, move to the heartland to learn where their food comes from. With the help of friendly neighbors, genetically modified seeds, and powerful herbicides, they plant and grow a bumper crop of America’s most-productive, most-subsidized grain on one acre of Iowa soil. But when they try to follow their pile of corn into the food system, what they find raises troubling questions about how we eat—and how we farm.

The Cumming Harvest:  Newsletter - April 3, 2013


RECIPES

Beef Jerky from an online site called “Against All Grain”.

Ingredients
1 pound london broil steak or flank steak
1/4 cup coconut aminos*
3/4 teaspoon all natural liquid smoke**
3/4 teaspoon chili powder
1/2 teaspoon sea salt
1/4 teaspoon fresh cracked pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 teaspoon smoked paprika
dash of cayenne pepper
*You can substitute Tamari for the coconut aminos but omit the sea salt.

*I buy All Natural Wright’s brand liquid smoke. Ingredients should just be Natural Hickory Smoke Concentrate and Water)

Directions

Place the steak in the freezer for 2 hours to firm it up and make it easier to slice thinly.
Remove it from the freezer and trim any visible white fat. Any fat left on the meat will spoil after drying.
Slice the steak into 1/8 inch pieces. For London broil slice it with the grain, for flank steak slice it against the grain.
Whisk together the ingredients for the marinade and combine the marinade with the beef slices in a shallow dish or a ziploc bag. Cover and marinate in the refrigerator overnight or up to 24 hours turning occasionally to evenly coat.
Remove the meat from the marinade and pat it dry with paper towels.

Dehydrator Method
Evenly place the strips on dehydrator sheets lined with parchment paper, careful not to let them overlap.
Dehydrate the beef for 3-4 hours at 145 degrees F, flipping once half way through.

Oven Method
Preheat oven to the lowest setting, usually 150-170 degrees F.
Line 2 baking sheets with parchment paper or foil and place a heavy wire rack over both (an oven safe cookie cooling rack will do).
Place the strips of beef on the racks leaving space between each piece so they’re not touching. Place the trays in the oven, leaving it open a crack to allow air to circulate.
Dehydrate for 8-10 hours, depending on the thickness of the meat, turning 1 time half way through.

*If you have a convection setting this process will probably take about half the time. Check for dryness around 5 hours and continue dehydrating if the strips are still moist.

Store the beef jerky in an airtight container at room temperature for up to 1 week. *The research I’ve done shows that this method results in jerky that can last on the shelf in a well sealed container for as long as 2 months. It never lasts long enough in our house to test that out though!

I hope you’re enjoying your Spring Break week, especially all the beautiful weather before the rain comes tomorrow. Thank you for visiting us on Saturday at the Easter Eggstravaganza event, I got a lot of new interest for the market and met the people at Chuiced. They make a unique blend of fruits, veggies, nuts and seeds in two flavors. It’s juice you chew and although sounds odd, it’s really good!

I don’t know if you heard but Toula Argentis of 2B Whole lost her son last week to complications of the flu. We offer her and her family our condolences and hope they are able to find peace in their hearts soon. Keep them in your thoughts and prayers.
