Martin's Farmstand:  Beets and Fresh Eggs


We have lots of good, fresh eggs right now. The chickens are laying well (I think chickens like this warmer weather) and the eggs sell slower in the winter because there are a lot less people coming to the stand during the winter months. The feed cost has dropped some so we have dropped egg price back to $3 dozen again. It was $3.25. We have 300 more layer hens planned to come into production early next summer so there should be abundant eggs through next summer and fall.

We still have lots of beets, carrots, apples and potatoes left. One thing that we like to do sometimes is to cook a big kettle of beets and then slice them into jars and cover them with a sweet pickle brine. They can be canned or just kept in the refrigerater. After the beets come out of the brine one can pickle hard cooked eggs in the same brine. It makes the eggs a pretty pink and they taste real good. Daniel

Are you looking for an unusual Valentine’s Day gift, one that is calorie-free and smells delicious enough to eat? Give a beautiful basket of herb plants from Dogwood Valley Greenhouse. These plants, each in its own 3 inch diameter pot, can be kept on a sunny windowsill and clipped throughout the winter to add flavor to your Valentine’s cooking. Set the herb plants into the garden in spring, where they will thrive and are winter-hardy. Put together your own selection of plants from the listing on this week’s market. The baskets will also be available after Valentine’s Day, with an Easter or spring theme.

Pickup will be Thursday from 4:15 to 5:15.

Another ode to Jefferson Airplane…and, it’s Sunday…and, I am always filled with brightness, rarely the blues, and, I really do view things in watercolor vibes…

I am just enjoying the ending to a fun weekend that was filled with old friends who descended on me, Friday night. A great weekend of amazing Bread Heads who flooded my shop, and an all around, feel good kind of couple of days.

I am ending my weekend with dinner in the oven, and a glass of wine in my hand. I am ordering from the market, and smiling at how good it feels to be able to order, locally, to know that I am getting the best of the best, and to know that I am shopping at my leisure, with an emphasis on nutrition and affordability.

Easy Saute of Oyster Mushrooms

serves 2

1 tablespoon vegetable oil
1/4 lb small oyster mushrooms (any large ones cut into 1-inch pieces), stems trimmed
1/2 teaspoon cider vinegar

PREPARATION
Heat oil in a large nonstick skillet over medium-high heat until hot. Sauté mushrooms with pinch salt until golden, about 8 minutes. Add vinegar and sauté until evaporated, about 1 minute. Season with salt, then transfer to a plate to cool. Serve at room temperature.
Cooks’ note:
Mushrooms can be made 4 hours ahead and kept at room temperature.

Hello!

What a difference a week can make! From 8" of snow to 70 degrees! We hope you have all enjoyed the roller coaster – sure keeps things interesting!

We have a great selection for you this week! Oyster Mushrooms are back from local farm Whispering Creek! These fresh mushrooms are delicate and tender and can cook very quickly. There is a recipe for a simple saute, but also consider using them in a frittata, omelet, risotto, lasagna, or a hearty salad! Keep them in the refrigerator in the paper bag, and they will keep for up to a week.

We are on a every-other-week schedule! This means that after this week, we will have a week off, and will be delivering again the following week, February 17th. It is a good idea to stock up on goodies! Get your eggs, frozen meats, and veggies to last you through the two weeks. The greens will keep well in the fridge in a plastic bag.

There are some new items our vendors have listed! The Bloomy Rind has all natural salami made from Tennessee beef. This, along with the crackers and her great selection of cheese makes for a stunner of a cheese tray! And don’t forget the sweets! There is some chocolate bark and caramel sauce up there too!

Wedge Oak Farm has a good selection of duck this week – whole and parts. Consider this as an alternative to your chicken routine!

And as always, there is Dozen Bakery’s fresh baked bread and cookies, and Bear Creek Farm’s great beef selection.
