&lt;p&gt;Ingredients:&lt;br /&gt;
Options for a delicious salad: &lt;br /&gt;
Choose only 1:&lt;br /&gt;
A large apple, or&lt;br /&gt;
A large orange, or&lt;br /&gt;
2 large cooked beets&lt;br /&gt;
(Pick one from the above list and cut up into small pieces)&lt;br /&gt;
add 1/4 cup of chopped pecans or walnuts (opt if you like) &lt;br /&gt;
and/or&lt;br /&gt;
1/4 cup mushrooms chopped (opt)&lt;/p&gt;
&lt;p&gt;Dressing to use with Arugula.&lt;/p&gt;
&lt;p&gt;*1 cup fresh chopped apples&lt;br /&gt;
Note: Add apples after you blend the rest of ingredients with emulsion blender.&lt;/p&gt;
&lt;p&gt;*1/4 cup oilve oil&lt;br /&gt;
*1/4 cup applecider vinegar (with mother)&lt;br /&gt;
*opt) add 4 tbls of lemon juice instead of the vinegar&lt;br /&gt;
*1/8 -1/4 cup raw honey (to taste)&lt;/p&gt;
&lt;p&gt;&#8226;add 2 cloves of fresh garlic&lt;br /&gt;
*cracked pepper&lt;br /&gt;
Blend with emulsion blender.&lt;/p&gt;

      <title>SHH Meatloaf</title>
      <description>From &lt;a href='http://Champaignoh.locallygrown.net'&gt;Champaign, OH&lt;/a&gt;&lt;br/&gt;&lt;p&gt;This is a never fail meatloaf recipe, tastes the same every time no guessing what herbs or spices to use. This recipe uses 3 lbs of meat. You can use all ground beef or follow the recipe  with the ground beef, ground turkey, and sausage.&lt;/p&gt;
I sometimes will divide the mixture in half. I will make a smaller meatloaf and make meatballs out of the other half. (Makes 12 meatballs) Bake them both at the same time in the oven. Reduce the baking time to 45 minutes for the meatloaf. Freeze the meatballs to serve later with Spaghetti, Meatball sandwiches or with a pesto sauce over pasta.
&lt;p&gt;To make meatballs: Set oven  at 350 degrees ( meatloaf bakes at the same the same temperature).Line the bottom 9 &amp;#215; 13-2&amp;quot;high baking pan with foil. Place meatballs an 2 inches apart not touching the sides of the pan.(you can fit about 12 meatballs on the pan.) Bake for approx. 45-60 minutes. Serve at once or freeze.&lt;/p&gt;

Cooking changes the radishes completely, replacing their pungent flavor with a mild, turnip-like sweetness.  Here are two versions: the one with chives goes well with chicken, pork, or fish. The version with cream turns a colorful bright pink. Sauteeing the radishes briefly in butter helps bring out their mellow, sweet flavor, and as a braising liquid, chicken broth was the first choice of the cooks at America&amp;#8217;s Test Kitchen, but feel free to experiment with vegetarian options.&lt;/p&gt;

Some are delicate enough for salads; others can be tough as shoe leather. In general, though, they fall into two categories, each of which is handled differently. Within each category, though, the type of green used is pretty much interchangeable. The &amp;#8220;tender greens&amp;#8221; (beet greens, Swiss chard, spinach) are delicate and moisture-rich. The &amp;#8220;assertive greens&amp;#8221; (kale, mustard, turnips, collards) are stronger in flavor, and require added liquid as they cook.&lt;br /&gt;
     This is a great recipe for those more assertive greens. Technique is the key. The initial shallow blanching erases some of their bitterness without robbing them of their character. It preserves their color and flavor, saves time, and allows them to be cooked more quickly.Once the greens have been blanched and drained, they can be used in any number of tasty recipes. In this one, the sweetness of the onions and the richness of the cream mellow the bitterness of the greens.&lt;/p&gt;

I usually mix whatever winter squash and other root vegetables I have on hand. This time I used Red Kuri Squash.&lt;/p&gt;

&lt;p&gt;We&amp;#8217;ve been celebrating the beginning of fall up at Creque Dam Farm with a beautiful harvest of pumpkins. Our talented chefs have been whipping them up in everything.&lt;/p&gt;
&lt;p&gt;Here&amp;#8217;s a few favorite recipes:&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Ayurvedic Pumpkin Cookies by Astrid&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Ingredients&lt;br /&gt;
1 cup pumpkin pureed (boiled until soft and then blended in the blender)&lt;br /&gt;
1/2 cup unsalted butter softened&lt;br /&gt;
1 cup sugar&lt;br /&gt;
2 T. vanilla &lt;br /&gt;
1/2 t. cinnamon&lt;br /&gt;
1/2 t. ginger&lt;br /&gt;
1/2. t. clove&lt;br /&gt;
1/4 t. nutmeg&lt;br /&gt;
5 dates&lt;br /&gt;
2 cups flour&lt;br /&gt;
pinch of salt&lt;br /&gt;
4 T. ground pecans&lt;br /&gt;
3 dozen whole nuts for topping&lt;/p&gt;
&lt;p&gt;Preheat oven to 350 degrees F&lt;/p&gt;
&lt;p&gt;Cream butter, sugar, spices, and vanilla together&lt;br /&gt;
Add dates, nuts, and pumpkin. &lt;br /&gt;
Whisk in salt and flour to wet mix.&lt;/p&gt;
&lt;p&gt;Bake on buttered sheet for 15 minutes or until golden brown.&lt;/p&gt;
&lt;p&gt;These are so decadent!&lt;/p&gt;
&lt;p&gt;*Roasted Pumpkin *&lt;/p&gt;
&lt;p&gt;Peel pumpkin and remove the seeds. Wash the seeds and roast them for a tasty treat. Add a bit of sea salt or cinnamon.&lt;/p&gt;
&lt;p&gt;Then slice your pumpkin into 1/8 inch (thin slices). Toss in olive oil and a bit of salt.&lt;/p&gt;
&lt;p&gt;Lay on a cookie sheet in a single layer and roast at 400 for 15-20 minutes. Better than french fries!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Basic Pumpkin Puree&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;You can add pumpkin puree to many, many things&amp;#8230;.soup, bread, muffins, pie, smoothies, and sauces. To make pumpkin puree, peel and seed your pumpkin. Then, cut it up into chunks and steam it in a large saucepan. You can use a steamer basket or just place the pumpkin in a few inches of water in the pot and boil away. You&amp;#8217;ll get delicious, soft boiled pumpkin in 20-30 minutes. After it&amp;#8217;s soft, put the steamed pumpkin in a blender or food processor and you will have pumpkin puree!&lt;/p&gt;
&lt;p&gt;You can pretty much use pumpkin in any way that you would use a banana or a potato. Sweet or savory, pumpkin is delicious. Be brave, have fun, and enjoy the delicious taste!&lt;/p&gt;

&lt;p&gt;Every time my mother presented this cake, she was asked for her recipe.  I have seen many recipes similar to this one, but this remains a &amp;#8220;treasure&amp;#8221; within my family.  Courtesy of my mom, Regina Sartalamacchia.&lt;/p&gt;
&lt;p&gt;Yield:  6 servings&lt;/p&gt;
&lt;p&gt;Beat together until well blended:&lt;br /&gt;
1-1/2 cups oil&lt;br /&gt;
2 cups sugar&lt;br /&gt;
3 large eggs&lt;br /&gt;
1 tsp. vanilla extract&lt;br /&gt;
1/2  tsp. salt &lt;br /&gt;
(don&amp;#8217;t overbeat; you&amp;#8217;re not trying to incorporate air)&lt;/p&gt;
&lt;p&gt;Add to the mixture and mix only till blended:&lt;br /&gt;
2-1/2 cups flour (or blend of flours)&lt;br /&gt;
1-1/2 tsp. baking soda&lt;br /&gt;
1/ Tbsp. cinnamon (or more, to taste)&lt;br /&gt;
1/2 tsp. ginger&lt;br /&gt;
1/2 tsp. allspice&lt;br /&gt;
1/2 tsp. mace and/or 1/2 tsp. nutmeg (optional)&lt;/p&gt;
&lt;p&gt;Fold in:&lt;br /&gt;
3 cups (or three medium) apples of the green baking type, not peeled, cut into quarters, cored, then cut into thin slices.&lt;br /&gt;
1 to 1-1/2 cups broken walnut meats&lt;/p&gt;
&lt;p&gt;Batter will be quite stiff.  Pour/scrape into a tube pan (Bundt pan) which has been well greased with a solid shortening such as Crisco.  Place in oven preheated to 400 and immediately lower temperature to 375   After the first fifteen minutes, lower the heat to 350.  Bake for a total of 50 to 60 minutes. Cake is done when it has pulled away slightly from the side of the pan and can be touched without leaving a mark.&lt;/p&gt;
&lt;p&gt;Notes:  When I have wanted to lower calories, I have lowered the oil to 1 cup, and the sugar to 1-1/2 cups, and found it is still very good.  &lt;br /&gt;
One-half-cup more apples and walnuts may also be used.&lt;/p&gt;

      <title>Pork Roast - Slow Cooker</title>

&lt;p&gt;Directions:&lt;br /&gt;
1&lt;br /&gt;
Rub pork roast with salt and pepper.&lt;br /&gt;
2&lt;br /&gt;
Cut 10 slits on top of pork roast and insert sliced garlic into slits.&lt;br /&gt;
3&lt;br /&gt;
Broil pork roast for about 5 minutes.&lt;br /&gt;
4&lt;br /&gt;
Slice onion and put in crockpot.&lt;br /&gt;
5&lt;br /&gt;
Place pork roast on top of onion and add cloves, bay leaves, water and soy sauce to crockpot.&lt;br /&gt;
6&lt;br /&gt;
Cook on high 5-6 hours or low 10-12 hours.&lt;/p&gt;

&lt;p&gt;1 1/4 tablespoons coriander powder&lt;br /&gt;
1/4 teaspoon red chili powder&lt;br /&gt;
1/2 teaspoon turmeric powder&lt;br /&gt;
1 medium green chilies, chopped&lt;br /&gt;
2 medium tomatoes, chopped&lt;br /&gt;
1 tablespoon cumin seed&lt;br /&gt;
1 teaspoon mustard seeds&lt;br /&gt;
1/4 cup oil, to fry ladyfinger&lt;br /&gt;
3/4 teaspoon salt&lt;br /&gt;
1/4 kg okra (bhindi)&lt;br /&gt;
2 tablespoons oil, for seasoning&lt;br /&gt;
2 medium onions, chopped&lt;/p&gt;

      <description>From &lt;a href='http://athens.locallygrown.net'&gt;Athens Locally Grown&lt;/a&gt;&lt;br/&gt;&lt;p&gt;Simple and tasty &amp;#8212; If you want to sound fancier, call it &amp;#8220;Sunchoke Soup.&amp;#8221; &amp;#8220;Sunchoke&amp;#8221; is the marketing name for these root vegetables, which come from a sunflower-like plant that is native to  eastern North America.  Despite its name, the Jerusalem artichoke has no relation to Jerusalem, and it is not a type of artichoke, though when it is cooked like this, the taste is similar. (Note: Although the original recipe calls for peeling sunchokes, this can be tedious and I suspect peeling loses nutrients. I just scrub them thoroughly and cut them into equal-sized pieces so they will cook evenly.)&lt;/p&gt;

It&amp;#8217;s good over steak, but equally at home in sandwiches and wraps. Substitute it for mayonnaise &amp;#8212; it has half the fat and calories, and uses a healthier oil. Chimichurri is available in little jars for a relatively high price. Make your own &amp;#8212; it&amp;#8217;s easy, fresh, locally grown, less expensive, and tastier! (Note: There are as many variations for Chimichurri as there are stories about how it got its name. The recipe here is pretty basic, but you can play around with using different kinds of vinegar and/or adding other herbs you enjoy, such as cilantro.) &lt;span class="caps"&gt;GLITCH&lt;/span&gt; &lt;span class="caps"&gt;NOTE&lt;/span&gt;: The last four ingredients won&amp;#8217;t insert. They are 1/2 tsp. dried oregano, 1/2 tsp. hot pepper flakes (opt.), 1/2 tsp. freshly ground black pepper, and 1 cup extra virgin olive oil.&lt;/p&gt;

&lt;p&gt;Salad ingredients&lt;/p&gt;
&lt;p&gt;1 head of Bok Choy OR 1 Bag of Tokyo Bekana OR 1 head of Napa Cabbage&lt;br /&gt;
Cilantro&lt;br /&gt;
Green Onions&lt;/p&gt;
&lt;p&gt;Prepare the Greens:&lt;/p&gt;
&lt;p&gt;Cut the very end of the stem off all the bok choy/pac choi and Tokyo Bekana leaves. Coarsely chop the remaining leaves and stems into &#189; inch pieces. If you are using scallions, cilantro or another vegetable, chop it up and add it to the choi. Wash the greens and get ready to toss them with the dressing.&lt;/p&gt;
&lt;p&gt;Sesame dressing ingredients&lt;/p&gt;
&lt;p&gt;2 Tablespoons red wine vinegar&lt;br /&gt;
1 Tablespoon rice vinegar&lt;br /&gt;
1 Tablespoon soy sauce&lt;br /&gt;
&#189; teaspoon sesame oil&lt;br /&gt;
2 Tablespoons canola oil&lt;br /&gt;
1 &#189; teaspoons agave syrup (or honey in a pinch)&lt;/p&gt;
&lt;p&gt;Add all dressing ingredients to a bottle and shake, shake, shake.&lt;/p&gt;
&lt;p&gt;The &#8220;Crunchies&#8221;&lt;/p&gt;
&lt;p&gt;1 teaspoon canola or mild-tasting oil&lt;br /&gt;
1 bag of ramen noodles (organic or otherwise &#8211; use only the noodles, not the flavor packet)&lt;br /&gt;
1/3 cup slivered almonds&lt;/p&gt;
&lt;p&gt;Prepare the Crunchies:&lt;/p&gt;
&lt;p&gt;Lay an unopened bag of ramen noodles on the counter or floor and whack them with a meat tenderizer until they are fully crushed. Careful, the bag might pop if you get too excited while you do this! Heat a skillet over medium-low heat and add the oil. When it is warm, pour in the crushed noodles, discarding the flavor packet. Add the almonds. Stir occasionally and cook until the noodles are just golden brown.&lt;/p&gt;
&lt;p&gt;Combine everything in a salad bowl, toss and enjoy!&lt;/p&gt;
