Creamy Basil Pesto

Serves: Makes 1 3/4 cups (7 servings)


Ingredients
4 garlic cloves coarsely chopped
1 cup reduced-fat sour cream
2 cups fresh basil leaves
1/3 cup chopped fresh parsley
1/4 teaspoon crushed red pepper
1/2 cup grated Parmigiano-Reggiano cheese
2 tablespoons chopped toasted pine nuts
To Taste Salt and freshly ground black pepper

Step by Step Instructions
  1. Combine the garlic and sour cream in the bowl of a food processor, and pulse until the garlic is finely chopped.
  2. Add the basil, parsley, crushed red pepper, cheese, and pine nuts. Puree until the sauce is smooth.
  3. Season with salt and pepper to taste.
  4. Enjoy!
