Vegetable Quinoa Pilaf

Serves: Serves 2-4
Vegetarian!

Ingredients
1 tbsp Extra virgin olive oil
1 medium Onion, diced
3 Carrots, peeled and shredded
1 Broccoli, lg head, trimmed, washed and shreddded
2 cups kale, ribs removed, washed and shredded
3 cups Veggie broth, low sodium
1 tsp Black pepper
1 tsp Paprika
1 tsp Sea salt
1 tsp Red pepper flakes (optional)
1 cup quinoa

Step by Step Instructions
  1. Using a food processor, shred onion, carrots, broccoli and kale
  2. In a medium saucepan, saute shredded veggies in olive oil 2-3 minutes
  3. Add quinoa, broth and spices
  4. Cover and bring to a boil
  5. Reduce heat to med-low, and simmer for 12-15 minutes, until liquid is absorbed
  6. Serve warm or cold
