Stir Fried Yellow Rice

<p>This is a quick and easy way to get dinner on the table using all farmers market ingredients. You&#8217;ll just use whatever vegetables you&#8217;ve scored from the market and any leftover Arkansas Gourmet Rice Company Yellow Rice Mix (Brown rice, white rice, regular or vegan and gluten free). While i&#8217;m giving this recipe as a vegan dish, one could easily add chicken or fish for meat eaters.</p>

Vegan!

Ingredients
3 tblsp. sesame seed oil
3 tblsp. soy sauce
1 tblsp. freshly grated ginger
2 cloves freshly chopped garlic
1 bag prepared Arkansas Gourmet Rice Yellow Mix
3 cups chopped vegetables

Step by Step Instructions
  1. Pour sesame oil on a hot griddle. Top the griddle with the chopped vegetables, garlic, and ginger. Stir fry vegetables until crisp-tender (about 2 minutes). Move vegetables continuously so they don't burn.
  2. Add the leftover prepared Arkansas Gourmet Rice Company Yellow Rice Mix and continue to stir fry. It's better to use cold rice from the fridge, but the recipe will still work with a freshly made bag of rice. Add soy sauce.
  3. Cook until well mixed; about another 2 minutes. Top the stir fried rice with more soy sauce and sesame oil if desired, and serve.
