Tomatillo-Red Onion Salsa

<p>This simple and different salsa is a great compliment to grilled chicken, steak, or fish. You can also add it to your tacos or fajitas to change things up a little!</p>

Ingredients
2/3 cup chopped tomatillos (3-4 medium)
1/3 cup chopped red onion
2 tsp grated lemon rind
2 Tbsp fresh-squeezed lemon juice
1 Tbsp olive oil
1/4 tsp salt
